Porcini Crusted Lamb Chops

1/2 oz dried porcini’s, ground

4 TBS EVOO

2 garlic cloves, grated

1 TBS fresh rosemary, minced

1 tsp coarse salt

1/2 tsp black pepper

lamb loin chops

  1. Preheat oven to 375
  2. Mix mushrooms, EVOO, garlic, spices into paste
  3. Coat lamb with paste, rest at room temp 30 min. or more
  4. Sautee lamb in EVOO in frying pan, 2 or 3 min. per side
  5. Move pan to oven, 8 to 10 min. depending on thickness
  6. Rest a few minutes before serving
