Porcini Crusted Lamb Chops
1/2 oz dried porcini’s, ground
4 TBS EVOO
2 garlic cloves, grated
1 TBS fresh rosemary, minced
1 tsp coarse salt
1/2 tsp black pepper
lamb loin chops
- Preheat oven to 375
- Mix mushrooms, EVOO, garlic, spices into paste
- Coat lamb with paste, rest at room temp 30 min. or more
- Sautee lamb in EVOO in frying pan, 2 or 3 min. per side
- Move pan to oven, 8 to 10 min. depending on thickness
- Rest a few minutes before serving
