Small head radicchio, leaves torn into bite size pieces
Mini or Persian cucumbers, cut into bite size pieces
Fresh dill, finely chopped
Lemon, zested and juiced
Salmon fillets
- Make salad of radicchio, cucumber, dill, lemon, S&P, EVOO
- Cook salmon
- Sautee onion in EVOO, toast farro in pan, add broth, cover, and cook until done (20 min.)
- Break salmon into chunks, mix into farro, top with salad to serve
