Farro with Salmon and Radicchio Salad

EVOO

Chopped onion

S&P

Farro

Broth

Small head radicchio, leaves torn into bite size pieces

Mini or Persian cucumbers, cut into bite size pieces

Fresh dill, finely chopped

Lemon, zested and juiced

Salmon fillets

  1. Make salad of radicchio, cucumber, dill, lemon, S&P, EVOO
  2. Cook salmon
  3. Sautee onion in EVOO, toast farro in pan, add broth, cover, and cook until done (20 min.)
  4. Break salmon into chunks, mix into farro, top with salad to serve
