Baked Polenta with Crispy Leeks and Blue Cheese

3 TBS butter

1 qt broth

1 cup polenta

3 TBS olive oil

2 medium leeks

4 oz creamy blue cheese

Parsley or basil, chopped for garnish

  1. Heat oven to 350. Butter a 9×9 baking dish
  2. Melt 2 TBS butter in baking dish, add hot broth, stir in polenta
  3. Cover with foil, bake 40 min.
  4. Halve and slice the leeks, add sautee on high with salt until golden and crisp
  5. Remove baking dish from oven, stir in half the cheese, re-cover for 10 min.
  6. Serve topped with remaining cheese, leeks, olive oil drizzle, and garnish
