Baked Polenta with Crispy Leeks and Blue Cheese
3 TBS butter
1 qt broth
1 cup polenta
3 TBS olive oil
2 medium leeks
4 oz creamy blue cheese
Parsley or basil, chopped for garnish
- Heat oven to 350. Butter a 9×9 baking dish
- Melt 2 TBS butter in baking dish, add hot broth, stir in polenta
- Cover with foil, bake 40 min.
- Halve and slice the leeks, add sautee on high with salt until golden and crisp
- Remove baking dish from oven, stir in half the cheese, re-cover for 10 min.
- Serve topped with remaining cheese, leeks, olive oil drizzle, and garnish
