1 TBS oil
2 shallots chopped
2 garlic cloves minced
3 Cups baby spinach
1-½ Cups artichoke hearts chopped
½ tsp salt
½ tsp pepper
6-8 egg whites lightly beaten
⅓ Cup parmesan grated
1 TBS parsley minced
- Preheat oven to 350
- Sautee shallots and garlic in oil
- Stir in spinach, artichokes
- Sprinkle salt and pepper
- Pour in egg whites — don’t stir
- Sprinkle cheese
- Bake in oven 10 min.
- Sprinkle parsley
