Egg Whites Frittata with Spinach and Artichokes

1 TBS oil

2 shallots chopped

2 garlic cloves minced

3 Cups baby spinach

1-½ Cups artichoke hearts chopped

½ tsp salt

½ tsp pepper

6-8 egg whites lightly beaten

⅓ Cup parmesan grated

1 TBS parsley minced

  1. Preheat oven to 350
  2. Sautee shallots and garlic in oil
  3. Stir in spinach, artichokes
  4. Sprinkle salt and pepper
  5. Pour in egg whites — don’t stir
  6. Sprinkle cheese
  7. Bake in oven 10 min.
  8. Sprinkle parsley
