Matafan

Time: 45 min. Serves 4-6

4 oz smoked bacon, chopped

3 eggs

2 c milk

1 pinch salt

1-1/3 c flour

1 bunch chives, or 4 scallions (green parts), minced

3 T butter

2 oz Gruyere, grdated

 

  1. Preheat oven to 425
  2. Sautee bacon
  3. Whisk eggs, milk, salt, then blend in flour to make batter
  4. Add chives to batter
  5. Melt butter in large skillet, add batter, cook gently (spatula around edges to prevent sticking)
  6. Sprinkle bacon on top, bake in oven 15-20 min. til puffed and golden
  7. Top with Gruyere and serve immediately
