Time: 45 min. Serves 4-6
4 oz smoked bacon, chopped
3 eggs
2 c milk
1 pinch salt
1-1/3 c flour
1 bunch chives, or 4 scallions (green parts), minced
3 T butter
2 oz Gruyere, grdated
- Preheat oven to 425
- Sautee bacon
- Whisk eggs, milk, salt, then blend in flour to make batter
- Add chives to batter
- Melt butter in large skillet, add batter, cook gently (spatula around edges to prevent sticking)
- Sprinkle bacon on top, bake in oven 15-20 min. til puffed and golden
- Top with Gruyere and serve immediately
