White Bean and Avocado Salad with Garlic Oil

1/4 cup oil

3 garlic cloves, thin sliced

2 avocados, in small chunks

2 cans cannellini beans, drained and rinsed

3 TBS cilantro, chopped

1 lemon zested and juiced

Salt & pepper, coarse TT

Pinch smoked paprika

  1. Heat oil, sautee garlic lightly, transfer to paper towel, save oil
  2. Toss oil, avocados, beans, cilantro, lemon juice, salt and pepper
  3. Garnish with garlic, lemon zest, paprika
