Vanilla Gelato
1 1/2 cups milk
6 Tbsp sugar
3 large egg yolks
1 1/2 tsp vanilla
In a 1- to 2-quart pan, combine milk and sugar. Stir over medium heat just until sugar dissolves.
Place egg yolks in a bowl. Gradually mix in 1 cup of the warm milk mixture, then pour egg mixture into pan, stirring. Continue to stir until liquid coats the back of a metal spoon in a thin, even, smooth layer, 6 to 8 minutes (do not scald or custard will curdle).
Mix in vanilla. Cool, cover, and chill until cold, at least 2 hours or up to 2 days.
Freeze as directed (preceding).
Makes 1 pint, 2 or 3 servings.
