Vegetarian Chili

2 Tbsp vegetable oil

1 large onion, chopped

1 small green pepper, chopped

2 cloves garlic, minced

1 Tbsp chili powder

1/2 tsp cumin

2 1/2 cups V8 100% Vegetable Juice

1 can (about 16 oz) black or kidney beans, drained

1 can (about 15 oz) pinto beans, drained

In a large saucepan, over medium heat, heat oil. Add onion, green pepper, garlic, chili powder and cumin and cook until onion is tender.

Add vegetable sauce. Heat to boil. Reduce heat to low. Cook 5 minutes.

Add beans and heat through.

Serves 4.
