For a simple sauce that will give this seared tuna a spicy turn, mix together soy sauce with prepared wasabi to taste. Drizzle onto the cooked tuna or pass at the table.
1/4 cup black sesame seeds
1/2 cup white sesame seeds
4 ahi tuna steaks, each 6 oz. and 1 inch thick
salt and freshly ground pepper to taste
2 Tbsp grape seed or canola oil
In a shallow dish, combine black and white sesame seeds and stir to mix. Season tuna with salt and pepper and dredge in sesame seeds, coating evenly.
In a searing pan over high heat, warm oil until smoking. Arrange tuna in pan (do not over-crowd) and cook until white sesame seeds starts to turn golden underneath, about 1 minute. Turn tuna and cook until white sesame seeds start to turn golden underneath, about 1 minute.
Transfer tuna to a cutting board and cut into 1/4-inch thick slices. Arrange tuna on individual plates overlapping slices. Serve immediately.
