Tomato, Basil, and Mozzarella Salad
INGREDIENTS:
2 pounds plum tomatoes, cored, peeled, sliced
1/2 pound fresh mozzarella cheese, sliced
1 large sweet red onion, thinly sliced
Salt and black pepper
Handful fresh basil leaves, torn
Olive oil
Wine vinegar
INSTRUCTIONS:
Overlap slices of tomato, mozzarella, and onion on a serving platter.
Season lightly with salt and generously with pepper, then sprinkle evenly with the basil.
Drizzle olive oil over the salad then sprinkle with vinegar.
Serves 6.
