Tomato and White Bean Soup with Lots of Garlic
10 garlic cloves, crushed
1/4 cup EVOO
2 (14 oz) cans cannellini, with liquid
2 (14 oz) cans diced tomatoes
1 cup stock
salt & pepper TT
heavy cream, for serving
- Sautee garlic in oil until golden
- Add remaining ingredients (except cream) and simmer 15 min.
- Blenderize until smooth
- Drizzle with cream to serve
