Three Mushroom Sauce

1/4 cup minced onion

1 tsp minced garlic

2 Tbsp butter

3/4 cup diced white mushrooms

3/4 cup diced shiitake mushrooms

3/4 cup diced wild mushrooms

1/4 cup white wine

1 cup chopped peeled and seeded plum tomatoes

salt and pepper

hot pasta

freshly grated Parmesan cheese

Saute onion and garlic in butter until soft. Add diced mushrooms. Cook until the mushrooms are fully softened.

Add 1/4 cup white wine and bring to a boil. Add plum tomatoes and heat through. Season with salt and pepper and toss with hot pasta.

Serve with freshly grated Parmesan.
