Strawberries with Balsamic Vinegar & Pepper

Strawberries combined with balsamic vinegar is a classic Italian dessert and presumes a mellow, aged balsamic. However, if you are using an unaged balsamic, begin by adding 1 teaspoon of vinegar, then tasting and adding more if desired. The amount of vinegar you use will also depend on the sweetness of the berries. Serving suggestion: You can serve the berries as is, or use it as a topping for frozen yogurt.

3 cups sliced strawberries
1/3 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 teaspoons balsamic vinegar
1/8 teaspoon pepper

1 In a medium bowl, combine the strawberries, brown sugar, and vanilla. Toss to combine. Cover and let stand for 20 minutes, stirring occasionally.

2 Just before serving, stir in the vinegar and pepper.
