Southwestern Pinto Beans

2 1/2 cups Lady Lee Pinto Beans

1/2 lb. bacon, cut up

2 cups (2 medium) chopped onions

3 garlic cloves, minced

2 (8-oz) cans tomato sauce

2 to 3 Tbsp chili powder

1/2 tsp oregano leaves

1/2 tsp salt

1/4 tsp pepper

1/8 tsp ground cumin

Soak beans as directed on this package; do not drain. Cover; simmer beans for 3 to 3 1/2 hours until tender. In large skillet, cook bacon, onions and garlic over medium heat until bacon is crisp. (Do not drain).

Add bacon mixture, tomato sauce, chili powder, oregano, salt, pepper and cumin to beans; stir well.

Simmer, uncovered, an additional 20 to 30 minutes.

8 (3/4-cup) servings.
