Slow Cooker Chicken with White Beans & Garlic

2 cans canellini (drained)

20 garlic cloves (smashed)

1/2 cup white wine

2 TBS olive oil

1 TBS white wine vinegar

1/2 tsp dried thyme

1/4 tsp red pepper flakes

Salt & pepper TT

4 chicken thighs (bone in, skin on)

1/2 lemon (juiced)

2 scallions (thin sliced)

1/2 cup flat leaf parsley (chopped)

  1. Combine beans, garlic, wine, oil, vinegar, thyme, red pepper, salt & pepper, in slow cooker.
  2. Season chicken TT, place on top of beans. Cook on low 6 hrs.
  3. Remove chicken to broiler, 4 min.
  4. Mix lemon, scallions, parsley into beans. Serve in bowl, topped with chicken.
