Slow-Cooked Pork Roast

1 1/2 lb. boneless pork sirloin roast, trimmed of surface fat and tied

For the marinade:

1 Tbsp canola oil

2 Tbsp soy sauce

1 Tbsp honey

1/2 tsp dry mustard

1 tsp cumin powder

1/4 tsp cayenne pepper

1/2 tsp ground ginger

Preheat oven to 275 degrees. Mix the marinade ingredients together in small bowl.

Place the roast in a roasting pan and rub it on all sides with the marinade. Roast it at 275 degrees for 2 hours, turning the meat in the juices every 45 minutes and adding a few Tbsp of water to the pan if the drippings get dry. When the roast reaches an internal temperature of 155 degrees, add enough water to the pan to create about 1/2 cup of juice.

Cut the roast into 1/4-inch slices, and serve 3 slices per person with a generous spoonfuls of the juice.

Serves 6.
