Sicilian Swordfish
4 swordfish steaks, 1/2-inch thick
2 Tbsp fresh lemon juice
3 Tbsp olive oil
2 tsp chopped fresh oregano (or 1 tsp dry)
Preheat a grill or the broiler for at least 15 minutes. Sprinkle the steaks with salt and freshly ground pepper and put them close under the burner or on the coals. Grill for about 2 minutes then turn and grill for 2 more minutes.
Meanwhile, whisk together the oil, lemon juice and oregano until creamy.
When the fish is ready, prick the surfaces with a fork and pour the sauce evenly over the fish, whisking at the same time.
