Sausages with Potatoes and Red Cabbage
¼ cup evoo
1 lb baby potatoes, halved
½ head red cabbage, core removed, cut in 1″ wedges
1 tsp caraway seeds, crushed
1 tsp coriander seeds, crushed
1 tsp coarse salt
1 onion, thin sliced
6 fresh sausages
1-½ TBS dijon mustard
½ cup parmesan, grated
1 lemon, zested and juiced
¼ cup dill, chopped
- Heat oven to 425.
- Oil baking dish. Potatoes cut side down on one half of dish, cabbage slices on other half. Sprinkle seasonings over all. Scatter onions on top. Drizzle with EVOO. Roast 25 min.
- Cut sausages lengthwise, coat with mustard.
- Bring out baking dish, flip cabbage (not potatoes). Sprinkle all with parmesan. Place sausages on top, cut side down. Roast 20 min. MOL.
- Remove sausage. Lemon zest and/or juice over the rest, sprinkle with dill, return sausage to top. Serve with more mustard, lemon wedges on the side.
