Rice, Black Bean and Feta Salad

1 can (15 oz. black beans , rinsed, drained

1 1/2 cups chopped tomatoes

1 1/2 cups cooked rice

1 pkg. (4 oz) ATHENOS Crumbled Feta Cheese

1/2 cup each chopped celery and green onion

1/2 cup Italian dressing

2 Tbsp chopped fresh cilantro or parsley

Mix all ingredients. Refrigerate

Makes 5 servings.

Variation: Substitute ATHENOS Crumbled Feta Cheese with Garlic & Herb for ATHENOS Crumbled Feta Cheese
