Red Basil Pesto
1 1/2 cups fresh basil leaves
2 1/2 Tbsp minced dried tomatoes
2 medium cloves garlic
2 Tbsp grated Romano cheese
6 Tbsp grated Parmesan cheese
1/3 cup pine nuts
1/2 cup olive oil
Combine basil, tomatoes, garlic, cheese and pine nuts in a food processor or blender. Process to mix.
With the machine running slowly, add the olive oil. Saute to taste with salt and pepper, and process to desired consistency.
Let stand 5 minutes before serving. Salt and pepper to taste.
