Radicchio, Blood Orange, and Goat Cheese Salad
2 TBS balsamic vinegar
6 TBS olive oil
1/2 lemon (juiced)
pinch salt
2 blood oranges (peeled and segmented)
1/4 cup mint leaves
3/4 cup walnut halves (toasted)
1 avocado (cubed)
1 head radicchio (leaves torn)
8 oz soft goat cheese
- Smear goat cheese on serving platter or plates. Lightly salt and drizzled with olive oil.
- Make vinaigrette of vinegar, oil, lemon, salt
- Combine orange, mint, walnut, avocado, radicchio, toss with vinaigrette
- Serve over goat cheese, garnish with mint
