Radicchio, Blood Orange, and Goat Cheese Salad

2 TBS balsamic vinegar

6 TBS olive oil

1/2 lemon (juiced)

pinch salt

2 blood oranges (peeled and segmented)

1/4 cup mint leaves

3/4 cup walnut halves (toasted)

1 avocado (cubed)

1 head radicchio (leaves torn)

8 oz soft goat cheese

 

  1. Smear goat cheese on serving platter or plates. Lightly salt and drizzled with olive oil.
  2. Make vinaigrette of vinegar, oil, lemon, salt
  3. Combine orange, mint, walnut, avocado, radicchio, toss with vinaigrette
  4. Serve over goat cheese, garnish with mint
