Radicchio-Anchovy Salad

1 head radicchio, leaves seaparated and torn into bite-size chunks

1 TBS dijon mustard

2 tsp anchovies, chopped

3 TBS EVOO

TT salt & pepper

a little parmesan, grated (optional)

  1. Combine mustard, anchovies, EVOO, salt & pepper
  2. Toss radicchio with dressing
  3. Finish with parmesan (optional)
