1 rack of lamb, at room temperature
2 tsp Dijon mustard
1/2 cup bread crumbs
2 large cloves garlic, peeled and minced
2 Tbsp crumbled feta cheese
2 Tbsp chopped Italian parsley
1/2 tsp kosher salt
freshly ground pepper to taste
Preheat the oven to 400 degrees.
Rub the fat-covered side of the lamb with the mustard. Place the bread crumbs, garlic, feta and parsley in a mixing bowl and rub between your fingers until the cheese is mixed into the bread crumbs. Season with the salt and pepper.
Pat the crumb mixture over the mustard and over the sides of the lamb. Place on a baking sheet and roast until medium rare, about 30 minutes. let stand for 10 minutes before carving.
Yield: 4 servings.
