Pork Medallions with Mustard and Capers
This recipe hardly tastes like diet fare, but it has only 164 calories per serving and takes only minutes to prepare.
non stick cooking spray
3/4 pound trimmed canter-cut pork loin, in 1/4-inch slices
salt and pepper to taste
1 garlic clove, halved
2 Tbsp mustard
2 Tbsp capers with their liquid
1 cup apple juice
Spray a large nonstick skillet with oil and place over high heat. When hot, add the slices of pork loin and brown. Add the garlic to the pan after flipping the pork. When browned on both sides, add the remaining ingredients. Stir to blend and simmer until the pork is firm. This will take only a few minutes.
Transfer the pork to a warm platter and reduce the liquid in the pan until it thickens lightly.
Rewarm the pork in the sauce and remove the garlic.
Serves 4.
