Penne with Three Herbs, Capers, Olives & Peppers

Mediterranean style black olives

6 quarts water

1 1/2 tsp salt

1/2 pound penne

2 Tbsp freshly squeezed lemon juice

2 Tbsp extra virgin olive oil

1/2 tsp freshly ground black pepper

2 tsp vinegar-packed capers

Put the water in a pasta cooker or other large pan and bring to a boil over medium-high heat.

Reduce the heat to medium, stir in 1 teaspoon of the salt and add the penne.

Cook for about 12 minutes, or until the penne is al dente.

Drain well.

Put the penne on a salad bowl and add the lemon juice, olive oil, pepper and the remaining 1/2 teaspoon salt.

Mix well, then add the capers, parsley, basil, cilantro, olives and peppers and mix again.
