Pea Soup with Maple-Glazed Bacon

1 lb dried whole or split yellow or green peas

1 clove garlic, chopped

½ celeriac bulb, diced

½ onion, diced

1 carrot, diced

½ lb slab smoked bacon

salt & pepper tt

¼ cup maple syrup

Parsley, chopped, for garnish

EVOO for finish

  1. Peas in large pot, lots of water, soak 12 hours
  2. Drain peas, then add garlic, celeriac, onion, carrots, bacon
  3. Cover with water to depth of 3”, simmer uncovered 3 hours
  4. At 2 hours, add salt and pepper
  5. At 2-½ hours remove bacon, allow to cool
  6. Chop bacon into bite-sized cubes, brown in hot skillet, add maple syrup and cook to coat
  7. Serve soup topped with bacon, garnish with parsley, drizzle with EVOO
