Parmesan Sage Crown Roast of Lamb
1 crown roast of lamb
2 teaspoons minced fresh sage
2 tablespoons freshly grated Parmesan cheese
2 tablespoons bread crumbs
2 cloves garlic, peeled and minced
1/4 teaspoon kosher salt
Freshly ground pepper to taste.
1. Preheat the oven to 425 degrees. Place the roast, crown side down, in a roasting pan. Bake for 55 minutes. Meanwhile, combine the sage, Parmesan cheese, bread crumbs, garlic, salt and pepper in a small bowl. Remove the roast from the oven and pat the sage mixture on the outside of the roast. Bake for 5 more minutes.
2.Turn the roast over and place on a serving platter. Serve immediately.
Yield: Eight servings.
