Outdoor Porchetta

Time: 5 hours

Servings: 15 to 20

1 whole boneless skin-on pork shoulder

Salt and Pepper

8 to 10 garlic cloves, chopped

3 TBS minced fresh rosemary

  1. Score skin into diamonds
  2. Rub inside and out with seasoning
  3. Roll into cylinder, tie at 1-2 inch intervals
  4. Heat grill to 350/375 degrees
  5. Place roast on side of grill away from direct heat, drip pan under
  6. Grill 3 to 4 hours, turning from time to time, til internal temp is 140
  7. Remove from heat, tent, rest for 20 min
  8. Serve hot or cold
