Microwaved Flounder Provencal

This recipe has only 270 calories per serving and takes barely 15 minutes to prepare from start to finish.

Four 8-oz fillets of flounder

1 1/2 Tbsp olive oil

1 Tbsp finely chopped basil leaves

1 garlic clove, minced

salt and pepper

8 ounce canned tomatoes, chopped

3 Tbsp fresh orange juice

1 Tbsp fresh lemon juice

Rub the fish fillets and the interior of a microwave-safe 8 by 13-inch baking dish with the olive oil. Place the fillets skin side down in the baking dish in a single layer and sprinkle each with basil leaves, garlic, salt and pepper. Scatter the tomatoes, orange and lemon juices over all.

Cover with microwave safe plastic wrap and microwave at full power for 4 minutes. Poke the plastic wrap to release the steam and srve immediately.
