Lemon Lamb Chops
2 teaspoons finely grated lemon zest
2 teaspoons coarsely ground black pepper
2 teaspoons thyme
3/4 teaspoon salt
2 tablespoons olive oil
8 loin lamb chops, cut 1 inch thick and trimmed of excess fat
I. In a small bowl, combine the lemon zest, pepper, thyme and salt.
Stir in the olie oil. Rub the lamb chops on both sides with the lemon pepper marinade and transfer to a plate. Let stand at room temperature for at least 30 minutes.
3, Preheat the broiler. Arrange the lamb chops on a broiler pan. Broil for about 6 minutes pcr side, turning once and brushing with any remaining marinade during cooking, until the lamb chops are nicely browned outside and medium—rare inside. Let rest for 5 minutes, then transfer to plates and serve.4 Servings
