Italian Chef’s Prime

3 tsp dill seed

1 Tbsp fennel seed

1 tsp oregano

1 tsp lemon pepper

1/4 tsp onion powder

1/4 tsp garlic powder

2- to 4-pound boneless pork rib end roast

Combine seasonings and rub over surface of roast.

Place in a shallow pan and roast in a 325 degrees oven for 1 to 1 1/2 hours, or until meat thermometer registers 155 degrees. let roast rest 5 to 10 minutes before carving.

Serves 4 to 6.
