Horseradish Cream
1/4 cup freshly grated horseradish or bottled horseradish, well drained
1 cup creme fraiche, sour cream or whipped heavy cream
salt and pepper to taste
white vinegar to taste (optional)
Mix together horseradish and creme fraiche. Season with salt and pepper and add a dash of white vinegar if you like it a bit tart.
