1-1/2 pound flank steak
1/4 cup finely chopped shallots
1 clove garlic, minced
3 Tbsp olive oil
2 Tbsp red wine vinegar
2 tsp chopped fresh basil or 3/4 tsp dried basil
1/4 tsp salt
1/4 tsp freshly ground pepper
1/2 tsp dried oregano
Trim excess fat from flank steak; score steak on both sides.
Combine shallots and remaining ingredients, and marinate steak in refrigerator 4 hours, turning occasionally.
Grill or broil 10 to 14 minutes or until done, turning once.
Yield: 6 servings.
