Ham Loaf

Good use of ham leftovers.

Ingredients

1/2 onion finely diced

1 TBS butter

3 cups ground ham (pulverize in food processor)

1 lb. ground pork

1 egg

2/3 cup seasoned bread crumbs

1/2 cup milk

1/8 tsp pepper

Topping

1/4 cup brown sugar

1 TBS dijon mustard

2 TBS cider vinegar

Instructions

  1. Preheat oven to 350
  2. Sautee onion in butter
  3. Combine all loaf ingredients in a bowl
  4. Bake 8″x4″ loaf in pan or on parchment paper
  5. Combine topping ingredients and spread on loaf last 20 min.
  6. Rest 5 min. before slicing
