1 3-1/2 pound chicken, cleaned and cut
Salt and black pepper
2 Tbsp olive oil
2 Tbsp butter
2 Tbsp fresh rosemary, chopped
1/4 cup shallots, chopped
1 tsp garlic, chopped
1/2 cup dry white wine
1/4 cup Italian parsley, chopped
Salt and black pepper
Combine olive oil, butter, rosemary, shallots, garlic and wine. Toss the chicken pieces with the marinade. Let sit for 6 hours in the refrigerator. Remove from marinade, pat dry, and season again with salt and pepper.
Sear chicken on the grill and cook for 30 minutes, turning as needed.
Sprinkle with Italian parsley. (If you are in the mood to try something a little different, you can use either rabbit or game hens in place of the chicken.)
