Green Peach Salad with Simple Lime Dressing

½ cup vegetable oil

¼ cup lime juice

½ tsp coarse salt

2 cups thinly sliced unripe peach

2 finely chopped Serrano chiles

1. Whisk oil, lime juice, and salt until emulsified
2. Toss peach slices and chiles with dressing
3. Cover and chill
4. Serve with soft cheese
