1 Tbsp minced ginger

2 garlic cloves, minced

1 tsp dried sage

1/2 tsp salt

1 loin of pork, about 5 pounds

1/3 cup apple jelly

1 1/4 tsp Tabasco sauce

2 medium carrots, sliced

2 medium onions, sliced

1 3/4 cups water

Mix the ginger, garlic, sage and salt in a small dish and rub the mixture over the pork.  Place the meat in a shallow roasting pan and roast for 1 1/2 hours. Remove from the oven, then score the meat in a diamond pattern.
