This salsa requires a lot of chopping, so you might ask your guests to give you a hand. To provide a bit of spice, add minced jalapeno or serrano chiles.
3 to 4 pounds tomatoes (choose a mix of different colors and sizes, such as Sungold cherry, Green Zebra, Brandywine, Early Girl, Golden Jubilee, Sweet 100)
1 red or yellow onion, minced
1/2 cup chopped cilantro leaves
1 tsp salt
1 tsp freshly ground pepper
2 Tbsp fresh lime juice
Cut the cherry tomatoes in half; chop the others into 1-inch pieces.
Put the tomatoes in a bowl and add the onion, cilantro, salt and pepper; mix well. Add the lime juice and mix again.
Serves 6 to 8.
