Fillet of Beef with Feta Medallions

1/2 cup crumbled feta cheese

2 Tbsp softened butter

1 Tbsp fresh marjoram

1 Tbsp fresh thyme leaves

1/2 tsp Dijon-style mustard

1/2 tsp fresh lemon juice

freshly ground lemon pepper

4 beef tenderloin steaks, cut 1 1/2 to 2-inches thick

1 Tbsp olive oil

salt to taste

Mix feta cheese, butter, herbs, mustard, lemon juice and lemon pepper. Form into a 3 by 3-inch log, wrap in plastic wrap. Refrigerate 2 to 3 hours or overnight.

Heat broiler. Brush each steak with olive oil; sprinkle with salt and lemon pepper. Broil steaks 5 inches from heat, 6 to 8 minutes per side or until medium-rare.

Cut feta mixture into 4 slices. Top each steak with 1 slice of feta.

Return steaks to broiler until feta is warm and softens. If desired, garnish with sprigs of thyme, marjoram and lemon slices.

Serve immediately.
