Crusty Pot Bread

Flour (3-4 cups)

Sugar (1 tsp)

Salt (1 tsp)

Yeast (1 tsp)

Herbs (optional)

Water (1.5-2 cups)

 

Start preparations at least 12 hours before ready to serve.

Mix ingredients in bowl until dough pliable.

Spray with olive oil, cover, allow to rise for 9 hours or more.

Fold in, spray with olive oil, cover, allow to rise for 2 hours MOL.

 

 

Start pre-heating oven to 450˚ about 1/2 hour before ready to bake.

Dump dough into preheated 450˚pot, shake to center, cover, bake for 30 min.

Uncover, bake for 15 min.

Cool on wire rack until ready to serve.

 

NOTES:

Herbs should be plentiful — fresh or dried OK.

Do not allow to rise more than 24 hours.

Original recipe says spritz with water before 1st bake, but I don’t bother.

Keep half loaf for next day in paper v. plastic?
