Cracked Pepper Beef Tenderloin
4 4-ounce filet mignon steaks
1/2 tsp salt
2-3 garlic cloves, minced
2 tsp whole peppercorns, cracked*
olive oil spray
Set oven temperature to 450 degrees.
Trim the steaks off visible fat and season with salt. Spread the garlic on both sides of the steaks. Sprinkle the cracked pepper over the steaks and press in.
Coat a large, oven-poof non-stick skillet with olive oil spray. Heat the skillet over high heat for 2 minutes. Pan sear the steaks on both sides for 2 minutes or until brown.
Transfer the skillet to the oven and cook for 5 to 10 minutes until the desired doneness is reached.
Serve the steaks on individual plates with pan juices poured on top.
