Chicken Breasts with Lemon

4 breasts, skinless and boneless

Salt & pepper TT

2 TBS EVOO

4 sprigs thyme or 1 tsp dried

2 TBS shallots finely chopped

2 tsp garlic finely chopped

2 tsp lemon zest

3 TBS lemon juice

1/2 cup chicken broth

2 TBS butter

  1. Salt & pepper breasts, sautee 5 min/side
  2. Remove breasts, add thyme, shallot, garlic and sautee 1 min
  3. Add lemon zest, juice, broth and deglaze
  4. Add butter, breasts and cook 3 min
  5. Serve breasts topped with veg mix
