1/4 cup EVOO
3 TBS red wine vinegar
3/4 tsp coarse salt
1/2 tsp Dijon mustard
1/2 tsp coarse pepper
3/4 cup finely sliced red onion
3 pints cherry tomatoes, halved
1 can cannellini beans, drained and rinsed
1/2 cup parsley, chopped
1/2 cup shaved parmesan
- Whisk together seasonings, stir in onion, marinate drressing at room temp 15-30 min.
- Put tomatoes, beans, parsley in bowl, toss with dressing
- Fold in parmesan, serve at room temp
