Chef’s Prime with Chinese Spices
2 Tbsp coarse salt
1 Tbsp five-spice powder
4 tsp ground black pepper
1 Tbsp grated orange peel
1 tsp ground cumin
2- to 4-pound boneless pork rib end roast
Mix together seasonings and rub over surface of pork. Cover and refrigerate overnight.
Place pork in a shallow pan and roast in a preheated 325 degrees oven until meat thermometer registers 155 degrees, 1 to 1 1/2 hours.
Let roast rest 5 to 10 minutes before carving.
Serves 4 to 6.
