Asparagus with Garlic-Cheese Breadcrumbs
2 pounds asparagus
3 Tbsp butter
1 Tbsp olive oil
1 large garlic clove, pressed
2/3 cup fresh bread crumbs
3 Tbsp freshly grated Parmesan cheese
Steam the asparagus until just tender.
melt the butter with the oil in a small non-stick frying pan. Add the garlic and saute briefly, then stir in the bread crumbs and saute until golden. Toss with the Parmesan.
Sprinkle the mixture over the warm asparagus.
Serves 4 or 5.
